1 thin-sliced shallot, large
1 tbsp. of oil, olive
Salt, kosher, as desired
Pepper, ground, as desired
8 oz. of thin-sliced Brussels sprouts, fresh
Optional: a pinch of caraway seeds
For fish
2 x 6-oz. fish fillets (you can substitute tofu or chicken breast if you like)
2 to 4 tsp. of mustard, whole grain
2 tsp. of oil, olive
Salt, kosher, as desired
Pepper, ground, as desired
Instructions:
1. Preheat the oven to 450 degrees F.
2. Slice shallots and potatoes. Then, toss with olive oil and season as desired. Place on cookie sheet lined with baking paper in one layer. Bake for 18-20 minutes.
3. Slice Brussels sprouts. Place in same, oiled bowl. Toss. Add pinch caraway seeds and season as desired. Set bowl aside.
4. Mix oil and mustard together in small mixing bowl. Season fish as desired. Divide mustard mixture and spoon over fish.
5. When potatoes have been baking for 20 minutes, add Brussels sprouts. Toss briefly. Lay fish into the mixture. Bake for 10 t0 12 minutes more, till fish has cooked fully through.
6. Divide hash in two individual-sized bowls. Top with glazed fish and serve.
